Knight-thon and cheesecake

The new semester is off to an AMAZING start! I am definitely about to have the busiest semester I have had yet in college, but I couldn’t be more excited. I am finally in all my major classes and am actually learning how to be a teacher! Eeeeeep!! 🙂

I am definitely the kind of person who likes being busy. I like waking up and planning out my day. To do lists make my heart leap. 😉  I find that I am more productive over all when I am busy. I schedule out when I am going to read this chapter, or work out, and overall I just get more accomplished.

A big part of my life this year is going to be Knight-Thon!!!! 😀 Knight-Thon is UCF’s dance marathon benefitting the Greater Orlando Children’s Miracle Network Hospitals. It is also UCF’s largest student run philanthropy! in 2013 we raied over a quarter of a million dollars for the kids. Universities all over the country put on these dance marathons, and the actual event takes place in April. I am on the Knight-Thon executive board this year, so I will be putting a lot of time in along with the rest of the board to make sure that this is the best Knight-Thon UCF has seen.

My official title is “Morale Chair.” Morale is basically a group of 50 crazy awesome students who throughout the year, practice dances, put on flash mobs, and fundraise for the event. At the event, the Morale team is the spirit of Knight-Thon. We keep everyone pumped (standing for 20 hours is no joke) and teach the 1,000+ students the Morale dance to be performed every hour on the hour. It is the best job on the board (yes i am biased) and I can’t wait for team interviews to start!!


On Saturday we had our fall retreat to Arnold Palmer hospital (one of the hospitals our money goes to.) Along with learning a lot and bonding with the board (seriously, they are the best) we took a tour of the hospital. Along with visiting the Oncology and Hematology Center, and level 1 Trauma center, we went to the NICU. We took turns going into a very dark room with lots of machines, and were able to see a 1 pound baby girl. It was an amazing moment, and the mental picture I have of that baby will serve as an awesome reminder of why we do what we do throughout the year. Truly incredible!


CMN hospitals strive to not “look or smell like a hospital.” Lets just say that Arnold Palmer fits the bill for that! This is what part of the hospital looked like. So cool, right??? My favorite part is Jack’s beanstalk and the castle. It is magical!

I put my crockpot to use for dinner last night. I stuck a chicken breast in and sprinkled it with taco seasoning. Once it was cooked (4 hours on high) and I shredded it, I added it to a salad of shredded romaine, black beans, corn, tomato, and a little salsa. It was so yummy, and me and my roommate ate every bite!


A few friends and I went to the mall this past weekend. There was a cheesecake Factory and we decided to grab slices to bring home. Great decision. Red velvet cake cheesecake, Lemon Raspberry cream cheesecake (mine,) and Carmel turtle cheesecake.)


And lastly a picture that my sister texted me of  Maggie. I am going home this weekend, and can’t wait to see her!



Unicorn bacon and a sweet deal!

I laughed entirely too long at this.

I meant to share this last week but forgot! There is a new consignment shop by my house and half of it is a boutique where she buys designer clothes and sells them real cheap. I found this skirt on the boutique side.


It was being sold for $60. I told the lady how much I loved it and she agreed to sell it to me for half off that price. So I bought it for 39 dollars. Guess how much the original price tag was for?…

$202.00!!!!!!! I was so excited .


Cute, preppy, and a bargain!! I can wear it to church, intern, teach, tea parties… Okay so I don’t go to tea parties but if I was Blair Waldorf it would be perfect. 😉

Tomato face

Running with Andy is great because he is way faster than me so I feel like I have to run faster than normal even though that is still way slower than his typical pace. 2.5 miles done!

I had to get ready super fast (like 30 second shower fast) after to go work at a school event. My face stayed tomato red like it always does after a run!


Came home and studied and hung out with the girls! Have you played the iPhone game “heads up?” It’s the funnest app ever. Download it. Now. 😀

Oh Panera

I could eat Panera every day of my life.

We have a cat in our apartment. She is my little snuggle bug princess.
We got her when she was a kitten a year ago and now she is all grown up. Her birthday is soon. I’m planning on baking a cake for her. Too bad she can’t eat it….(evil plan) 🙂

Love this precious thing!

2 mile run yesterday afternoon, and 20 minutes on the elliptical followed by some strength circuits this morning before class. Love starting the day off with a good sweat!

My identity

Coming back to school there is always a big hype about what “group” you are going to belong to. Without going into specifics, I see girls lives revolve around what “group” will accept them, what group their future best friends will be in, etc. this becomes their identity. They ARE this “group.” I think this happens a lot in life.

We tend to identify ourselves with who our friends are, what our career will be, how we look, what organization we belong to, what our talent is, etc. A good way to think about this is to consider what your initial response is when someone asks you to describe yourself. Example. I am a college student studying to be a teacher, I am close with my family, I have a serious boyfriend, I like to sing, read, and workout. Do those things determine who I am? No. I am a daughter of the KING! My identity is in Christ. Not in what clothes I pick out to wear tomorrow. Not in what chorus I get placed in. Not in my relationships. Not in the miles I run. Not in what job I will have one day. Those things are worldly and fleeting. I want people to look at me and KNOW that i am different. I am defined by God’s grace and love. My identity is in him.

It is okay to want to look good. It is okay to spend time on studies. It is okay to hang out with friends. But in everything I do, I want to be doing in God’s name. I want to sing because it is the gift he blessed me with. I want to spend time with friends who will see him through the way I act and the things I say.

Just a thought that I want to start the new semester off with!! XO

Back to school!

It’s a new school year!!! Andy, Mere and I all had class at the same time this morning. I made Andy take this picture. “First day of school! First day of school!”


I had an AMAZING class! My Literature for Children class. We have to read a ton if books but I love reading so I’m so excited 😀

I came home and had a lunch of salad and apple and peanut butter. That did nothing to fill me up so I had a bagel too.

I had an audition for the chorus at school and it went great! I haven’t sung (chorally) in 2 years so it was good to know I still can 😉 I can’t wait to start singing again!!!

I’m just getting home from a spin class. It was with a new girl teaching it. I didn’t love her music but still got a killer workout. Sweat in the eyeballs people.

Running with Maggie

Wow it’s been a while since I’ve posted! I’ve been just summering it up over here. Here are some pics of my past few weeks!






I took Maggie on her first run!


Man girl is fast!! She seriously makes the BEST running partner. She made it so much enjoyable for me just by seeing how much she was lovin life!


My pace was faster than usual with her, but we did have to stop a few times when she saw lizards. (ADD dog)

Ill be heading back to Orlando in 3 days!! Eeeepp!! I’m excited. Can I take Maggie with me? I’m gonna miss my new running buddy :/

But Im so ready to get back to school. It’s been a pretty sweet summer.
